TCF-Culinary Arts Center’s (YESAM), cultural tour to Safranbolu with the guidance of İbrahim Canbulat, architect and food culture researcher took place on October 24-25th, 2015.
Safranbolu one of the most enchanting cities in Turkey is famed for its unique architecture located on the mountain slopes, a canyon that passes from the middle of the city, narrow streets and a historical market place. It is almost an open air museum that has been added to UNESCO’s World Heritage list.
The tour started with a historical visit to several of the villages surrounding Safranbolu town center followed by a “zerde” (a traditional Ottoman dessert flavored with saffron, mainly made for circumssion ceremonies) making demonstration by Mr. Canbulat. The dinner consisted of traditional dishes highlighting Safranbolu’s saffron. The participants visited one of the largest saffron fields, and learned about growing and harvesting saffron followed by a very elaborate breakfast consisting of local products served near the saffron gardens. The tour continued with a visit to the Glass Terrace, İncekaya Aqueducts and a walk among the historical streets of Safranbolu town center. Lunch was served at a popular local restaurant before departure to İstanbul.
