BAMYA YEMEĞİ (OKRA STEW)

Ingredients
2 lbs.  Fresh okra, washed and stems trimmed without piercing the okra
1 Potato, peeled and cut into medium dice pieces
1 Tomato, peeled and cut into chunks
1 Onion, peeled and finely diced
1 tbsp. Tomato paste
2 tsp. Salt
2 tbsp. Butter
1 tsp. Sugar

Instructions
Place the butter in a pot, once melted start sauteeing the onions.  Once the onions are cooked and softened add the tomato paste and continue sauteeing for a few more minutes.  Add the okra, salt, sugar, potatoes and tomatoes.  Add enough hot water to cover the okra and cook over medium heat for about 20-25 minutes or until the okras and potatoes are softened.
