MERCİMEKLİ KULAKLI MAKARNA (DUMPLINGS WITH GREEN LENTILS)

Ingredients
For the dough
2 lbs. Flour
2 Eggs
3 tsp. Salt
1 cup Water
1 cups Green Lentils, boiled
1 Onion, finely diced
2 tbsp. Olive oil
1 tsp. Black pepper
2 tsp. Salt
½ bunch Parsley, finely chopped
1 ½ cup Yoghurt, whipped
2 tbsp. Butter
2 tsp. Red pepper flakes

Instructions
Prepare stiff dough made from flour, eggs, salt and water. Cover with a damp towel and let it rest. Meanwhile sauté the onions in butter until softened then add the boiled green lentils, salt and black pepper and cook until the lentils are completely softened. Take off the heat and add the chopped parsley and mix well. Let it cool. Divide the dough into 4 equal pieces. Stretch each piece of dough, as thin as lasagna sheets and cut into 3x3cm (1,5 inx1,5 in) squares. Place a tsp of the filling and fold in half to make a triangle. When finished boil some water and boil the dumplings until cooked, for about 10 minutes. Strain into serving bowls. Melt the butter in a small saucepan, add the red pepper and take off the heat after one minute. First put some yoghurt on the dumplings then some of the butter sauce and serve.
