Ingredients
1 lbs. Çökelek cheese (can be replaced with strained cottage cheese or ricotta salata)
½ bunch Parsley, finely chopped
½ bunch Fresh mint, finely chopped
½ bunch Scallions, finely chopped
½ bunch Dill, finely chopped
2 tsp. Red pepper flakes
1 Lemon, juice
1 Tomato, small size
4 tbsp. Olive oil
Instructions
Combine parsley, mint, scallions and dill in a large bowl. Then add the cheese, red pepper flakes, lemon juice and 2 tbsp of olive oil. Mix well. Form small balls with an ice cream scoop. Cut strips from the flesh of the tomato and place them on the cheese balls, and drizzle the rest of the olive oil. Serve immediately.
