CHEESE FILLED ZUCCHINIS

Ingredients

4-5 Zucchini, medium size, washed well
250 gr. (9 oz.) White cheese, semi-soft, grated
100 gr. (3.5 oz.) Fresh “kaşar” cheese, grated (you can substitute any melting cheese)
½ bunch Dill, finely chopped
1 Egg
1 tsp. Salt
2 tap. Black pepper

Instructions

Cut both ends of the zucchinis, then cut in half lenghtwise. With the help of a spoon remove the seeds. In a large pot boil some water, then add salt and cook the zucchinis about 10-15 minutes until slightly softened. Make sure the zucchinis still stay firm. Drain and set aside to let cool. Pre-heat broil setting of the oven to 160C (320 F).  In a bowl combine the grated whilte cheese, dill, egg and black pepper. Fill this mixture evenly in the zucchinis. Then sprinkle with the “kaşar” cheese. Lay on an oiled oven tray and broil for about 10-15 minutes until the cheese is melted and it has turned golden brown.
