Ingredients
½ cup Wheat semolina
3 cloves Garlic, minced
¼ cup Olive oil
1 cup Fine bulgur
1 ½ tbsp. Red pepper paste
2 Tomatoes, medium size, peeled and grated
2 tsp. Tuz
Water, as needed
1 bunch Parsley, finely chopped
Instructions
Combine the bulgur and semolina in a bowl, add a little bit of water to moist it. Then add the red pepper paste and salt and knead until it comes together to form a dough. Add more water if needed. Make small balls out of the dough, roll in your hands then press your thumb on one side to make a small indent. Prepare a pot with boiling water and boil the bulgur balls in water for about 5 minutes. Then strain. In a pan, heat the olive oil, add the garlic. Cook until softened then add the tomatoes. Cook until it resembles a thick sauce. Take off the heat and toss in the bulgur balls, mix well so the bulgur balls absorb the sauce. Then transfer to a serving platter, sprinkle chopped parsley and serve.
